Transform breakfast into a special occasion with this Peach Cobbler Baked French Toast, blending the flavors of cobbler with the simplicity of French toast.
Ingredients
French Toast
3/4 cup packed brown sugar
1/2 cup butter
2 Tbsp. corn syrup
1 loaf French Bread sliced
2 15 ounce cans Libby’s Sliced Peaches
1 cup milk
1 cup half & half
6 eggs
1 tsp. cinnamon
1/2 tsp. vanilla extract
Streusel Topping
6 Tbsp. butter softened
3/4 cup packed brown sugar
2/3 cup flour
1/2 tsp. cinnamon
Instructions
In a saucepan, combine brown sugar, butter, and corn syrup. Heat, stirring frequently, until blended. Pour into a greased 9×13 inch pan. Arrange bread slices over the brown sugar mixture. Drain peaches and spread them evenly over the bread.
In a bowl, whisk together milk, half & half, eggs, cinnamon, and vanilla. Pour over the peaches. Cover and refrigerate for several hours or overnight.
Before baking, combine butter, brown sugar, and flour for the streusel; sprinkle over the French toast. Bake uncovered at 350 for one hour.
Notes
Ensure each slice of bread is fully saturated with the custard for a creamy texture.
Keep an eye on the baking time, as ovens vary. The French toast is done when the top is golden brown and the custard is set.
Let the French toast cool for a few minutes before serving. This allows the custard to set further.
Be sure to grease your baking dish or use parchment paper to prevent sticking.
