Description

Fruit Filling

  • 3 cups fresh raspberries, 3 cups fresh peaches (peeled/chopped)
  • 3/4 cup granulated sugar, 2 tbsp cornstarch

Crust & Crumble Mixture

  • 2 cups all-purpose flour, 1 cup old-fashioned oats
  • 1/2 cup granulated sugar, 1/2 cup light brown sugar
  • 1 tsp cinnamon, 1/4 tsp kosher salt
  • 1 cup unsalted butter (melted), 1 egg (beaten), 1 tsp vanilla

Instructions

Filling: Gently toss raspberries and peaches. Whisk 3/4 cup sugar and cornstarch together; stir into the fruit to coat.

Dough: Whisk flour, oats, both sugars, cinnamon, and salt. Add melted butter, egg, and vanilla; stir until the mixture holds together when pressed.

Assemble: Press 2/3 of the oat dough into a greased 13×9-inch dish. Spread fruit evenly on top. Crumble the remaining dough over the fruit.

Bake: Bake at 350°F for 40–45 mins until juices are bubbling and topping is golden brown.

Set: Cool completely in the pan before slicing to allow the filling to set for clean cuts.

Notes

Oat Choice: Use old-fashioned oats for structural integrity; quick oats will yield a mushy texture.

Cornstarch is Key: This acts as the binder for the juices; omitting it will result in watery bars that won’t hold their shape.

Peeling Hack: Blanch peaches in boiling water for 30 seconds then move to an ice bath to make skins slip off easily.

Storage: Store in the refrigerator for up to 5 days to maintain the freshness of the fruit.
