Ingredients
Chocolate Chip Cookie Base
3/4 cup salted butter softened
3/4 cup brown sugar
1/2 cup granulated white sugar
1 whole large egg
1 egg yolk
1 tablespoon pure vanilla extract
1/2 teaspoon baking soda
2 teaspoon cornstarch
2 1/4 cups all-purpose flour
1/2 cup white chocolate chips
1/2 cup milk chocolate chips or mini chocolate chips
1/2 cup 4th of July sprinkles
Frosting
1/4 cup salted butter softened at room temperature
1 cup powdered sugar
2 tablespoons heavy cream or whole milk
1/2 teaspoon vanilla extract
Instructions
Preheat the oven to 350 degrees F. Line a 9″ x 13″ baking pan with foil or parchment paper, spraying with non-stick spray.
In a bowl, whisk together flour, baking soda, and cornstarch.
In a separate bowl, cream together butter, brown sugar, and sugar. Beat in the egg, egg yolk, and vanilla.
Add the dry ingredients to the wet ingredients until combined. Mix in the chocolate chips. Press the dough into the prepared pan.
Bake for 25-30 minutes, or until golden brown.
Let cool for 5 minutes, then transfer to a wire rack.
To make the frosting, cream softened butter. Add powdered sugar, heavy cream or milk, and vanilla, beating until creamy and fluffy.
Frost the cooled cookie bars, add sprinkles (optional), and cut into bars.
Notes
Don’t overbake. Keep a close eye on the bars while baking and remove them from the oven when the edges are golden. Overbaked bars will be dry.
Let the bars cool completely. This prevents the frosting from melting and sliding off.
Use room temperature ingredients. This allows the ingredients to combine more easily, resulting in a smooth batter and creamy frosting.
Chill the frosted bars. This firms up the frosting and makes them easier to cut and serve.
