Description
A vibrant twist on a brunch classic that brings the nostalgic flavor of Funfetti cake to the breakfast table. Hearty bread is soaked in a rich, cake-mix-infused custard overnight, then baked with a buttery streusel and drizzled with rainbow chip frosting.
Ingredients
For the Casserole
- 1 loaf sourdough or French bread (1-inch chunks)
- 8 large eggs, 2.5 cups milk, 0.5 cup heavy cream
- 2 cups Funfetti cake mix, 2 tsp cinnamon, 2 tsp vanilla
- 5 tbsp rainbow sprinkles
For the Streusel Topping
- 1 cup Funfetti cake mix
- 1/2 cup cold salted butter (cubed)
For Serving
- Melted rainbow chip frosting or maple syrup
Instructions
Soak: Grease a 9×13 pan. Whisk eggs, milk, cream, 2 cups cake mix, cinnamon, and vanilla. Pour over bread chunks in the pan; toss to coat. Top with sprinkles, cover, and chill 8–12 hours.
First Bake: Preheat oven to 350°F. Bake casserole uncovered for 25–30 mins.
Streusel: Work cold butter into 1 cup cake mix until pea-sized crumbs form. Sprinkle over the partially baked casserole.
Final Bake: Bake 15–25 mins more until set and golden. Rest 5 mins.
Serve: Drizzle with melted frosting or syrup.
Notes
Stale Bread is Best: Dry or stale bread absorbs the custard much better than fresh bread, preventing a soggy center.
Frosting Tip: Microwave the frosting in short bursts until it reaches a ribbon-like consistency for a professional ‘cake glaze’ look.
Storage: Refrigerate leftovers for up to 3 days; microwave slices for 30–45 seconds to reheat.
