1 small yellow onion, diced
1 packet (1 oz) taco seasoning mix
1 can (14.5 oz) diced tomatoes with green chilies
1.5 cups beef broth
1 cup long-grain white rice, uncooked
1 can (15 oz) black beans, rinsed and drained
1.5 cups Mexican blend shredded cheese
Fresh cilantro for garnish


Instructions

In a large skillet over medium-high heat, cook the ground beef and diced onion until browned, about 6-8 minutes, then drain any extra fat.

Mix in the taco seasoning, uncooked rice, diced tomatoes with green chilies, drained black beans, and beef broth.
