Description
A quick, wholesome, and customizable snack featuring a chewy, protein-rich base that requires no oven time and only a handful of pantry staples.
Ingredients
1 1/4 cups old fashioned rolled oats
2 tablespoons power mix-ins
1/2 cup nut butter of choice
1/3 cup sticky liquid sweetener of choice
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1/2 cup mix-ins of choice
Instructions
1. Combine all ingredients in a large bowl: oats, power mix-ins, nut butter, sweetener, vanilla extract, salt, and any chosen mix-ins or spices. Stir everything together until well combined.
2. Adjust the consistency as needed: add more oats if the mixture is too wet, or a little more nut butter if it’s too dry. The ideal texture is a slightly sticky dough that holds its shape when squeezed.
3. Chill the mixture in the refrigerator for 30 minutes to make it easier to shape into balls.
4. Take the chilled mixture from the refrigerator and form it into balls of your preferred size.
5. Serve immediately, or store in an airtight container in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months.
Notes
Stickiness Matters: The consistency of the dough is the most important part of this recipe. Because different brands of nut butter have varying levels of oil, always feel free to adjust the oats or nut butter ratios until you reach that perfect sticky dough.
Chilling is Key: Do not skip the 30 minute rest in the refrigerator. Cold fat is easier to work with, and the oats need that time to absorb a bit of the liquid to ensure the balls hold their shape perfectly.
Uniformity: To ensure all your energy balls are the same size, use a small cookie scoop to portion them out before rolling.
