1 cup butter, softened
2 cups brown sugar
2 whole large eggs
2 teaspoons vanilla extract
3 cups old fashioned oats
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
Fudge Layer
1 12 oz package semi-sweet chocolate chips
1 14 oz can sweetened condensed milk
2 Tablespoons butter
1 teaspoon salt
1 teaspoon vanilla extract
1 cup mini M&M’s
Instructions
Preheat the oven to 350F. Grease or line a 139 inch baking dish with parchment paper. Set aside.
In a stand mixer, beat the butter and brown sugar until light and fluffy. Mix in the eggs and vanilla. Stir in the oats, flour, baking soda, and salt until well combined.
Press 2/3rds of the mixture into the prepared baking dish.
In a microwave-safe bowl, melt the chocolate chips, sweetened condensed milk, butter, and salt together. Heat for 1 minute, stir until smooth. Heat in 15-second intervals if needed.
Mix in the vanilla. Pour over the base mixture, and spread evenly.
Crumble the remaining base mixture over the fudge layer.
Sprinkle the M&M’s evenly over the top.
Bake for 25-30 minutes until set and golden brown.
Remove from oven and let cool completely before serving.
Notes
For extra rich bars, use high-quality cocoa powder.
Be sure to measure your flour correctly – overpacking can lead to drier bars.
Resist the urge to overbake. Check the bars towards the end of the baking time and they’re done when the center is set.
For easy removal, line your baking pan with parchment paper, leaving an overhang on the sides.
Let the bars cool completely before cutting. This will allow the fudge to set and give you the cleanest cuts.
