Miso Mushroom Pasta

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

This Miso Mushroom Pasta is an absolute dream of a weeknight meal, bringing together earthy mushrooms, savory miso, and a luscious, creamy sauce that coats every strand of pasta. It’s sophisticated enough for company but so wonderfully simple to whip up when you’re craving something truly special. Get ready for a bowl of pure comfort, elevated by the umami magic of miso and the brightness of fresh lemon.

Ingredients

Scale

2 tablespoons olive oil
2 tablespoons butter
270 grams mushrooms (sliced but not super thinly)
3 – 4 garlic cloves (minced)
2 tablespoons fresh thyme leaves (divided)
3/4 cup single or light cream
1/2 – 1 tablespoon white miso paste (see notes)
40 grams parmesan (finely grated)
1/4 teaspoon black pepper
2 tablespoons fresh lemon juice plus 1 tablespoon of zest
Pasta of your choice (see notes)

Instructions

Cook pasta in salted boiling water until al dente, reserving about a cup of the cooking water.

Heat olive oil and butter in a large skillet over medium-high heat.

Add mushrooms and cook undisturbed for 4-5 minutes until golden brown, turning occasionally.

Add minced garlic and 1 tablespoon of thyme to the pan and cook for 1 minute.

Pour in the cream over low heat, ensuring it doesn’t boil.

Whisk in the miso paste until smooth.

Gradually add the grated parmesan, stirring until melted after each addition.

Stir in lemon juice and pepper, then simmer gently for 1-2 minutes.

Add the cooked pasta to the skillet and toss to combine, letting it bubble gently to thicken. Add pasta water if needed to loosen.

Stir in the remaining thyme and lemon zest, then serve.

Garnish with extra parmesan, lemon zest, and thyme if desired.

Notes

Don’t Overcrowd the Pan: When cooking your mushrooms, ensure they have enough space in the skillet. If your pan is too full, the mushrooms will steam instead of searing, and you won’t get that delicious caramelization. Cook in batches if necessary.

Miso Matters: White miso paste is milder and slightly sweeter, making it perfect for sauces like this. Taste your sauce before adding the full tablespoon if you’re unsure about the miso flavor intensity.

Pasta Water is Your Friend: That reserved pasta water is crucial for creating a silky, emulsified sauce that clings beautifully to the pasta. Don’t skip this step!

Fresh is Best: While dried thyme can work in a pinch, fresh thyme truly elevates this dish. The bright, herbaceous notes are a perfect contrast to the rich sauce.
