Miso Glazed Salmon

Miso Glazed Salmon

  • Total Time: 2 hours 20 minutes
  • Yield: 4 servings 1x

Description

This Miso Glazed Salmon is an elegant yet simple dish bursting with umami-rich flavor and a beautiful, glossy finish. Tender, flaky salmon coated in a savory-sweet glaze makes for a perfect centerpiece.

Ingredients

Scale

2 pounds salmon, (sliced into four filets)
salt and pepper
1/4 cup miso paste
2 Tablespoons Soy Sauce
1 Tablespoon brown sugar
1 Tablespoon rice vinegar
1 teaspoon sesame oil
chopped green onions and sesame seeds for garnish

Instructions

Season the salmon filets with salt and pepper.
Combine miso paste, soy sauce, brown sugar, rice vinegar, and sesame oil in a bowl, whisking until smooth. Set aside 1 tablespoon of this mixture.
Marinate the salmon in the remaining glaze for 1 to 3 hours.
Preheat your oven to 375F. Place the salmon in a large skillet and discard the marinade. Bake for 12 to 15 minutes, or until the salmon is nearly cooked through and opaque. Brush with the reserved glaze and broil on high for 1 to 2 minutes, until the internal temperature reaches 125-130F.
Garnish with green onions and sesame seeds if you like.

Notes

While 1 to 3 hours is ideal for flavor penetration, you can marinate for up to 4 hours. Avoid marinating for much longer, as the acidity in the rice vinegar could start to change the texture of the fish.

Salmon is best when it’s cooked until just opaque and flakes easily with a fork. Overcooked salmon can become dry, so keeping an eye on it during the final minutes is key. Using an instant-read thermometer is the most accurate way to ensure it’s perfectly cooked.

A good quality oven-safe skillet will make this recipe a breeze, as you can sear and then transfer directly to the oven, or in this case, bake and broil all in one pan. Cast iron or stainless steel are excellent choices.

Broilers can be intense! Always stay in the kitchen and watch the salmon closely during those final 1-2 minutes to prevent the glaze from burning.
