Mini Gingerbread Loaves

Mini Gingerbread Loaves

  • Total Time: 1 hour 10 minutes
  • Yield: 6 mini loaves

Description

These Mini Gingerbread Loaves are perfectly moist, wonderfully spiced, and just the right size for a sweet treat. They’re ideal for sharing, gifting, or simply enjoying with your favorite warm beverage. Imagine a tender crumb infused with the cozy essence of ginger, cinnamon, nutmeg, and cloves, finished with a delicate dusting of powdered sugar.

Ingredients

• 1⁄2 cup brown sugar
• 1⁄2 cup butter, softened
• 1⁄4 cup molasses
• 1 teaspoon vanilla
• 2 eggs
• 1⁄2 cup milk
• 1⁄2 cup sour cream
• 2 cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 4 teaspoons ground ginger
• 1 teaspoon ground nutmeg
• 1 teaspoon ground cinnamon
• 1⁄2 teaspoon ground cloves
• 1⁄2 teaspoon salt
• Powdered sugar for dusting

Instructions

1. Preheat your oven to 350F and prepare a 6 cup mini loaf pan by greasing it.
2. In a large bowl, cream together the brown sugar and softened butter until the mixture is fluffy.
3. Beat in the molasses, eggs, and vanilla until well combined.
4. Mix in the milk and sour cream until the batter is smooth.
5. Gradually add the all-purpose flour, baking soda, baking powder, ground ginger, nutmeg, cinnamon, cloves, and salt, mixing until everything is just combined.
6. Distribute the batter evenly among the prepared mini loaf tins.
7. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
8. Let the loaves cool in the pan for 10 minutes before transferring them to a wire rack to finish cooling.
9. Optionally, dust with powdered sugar before serving.

Notes

Don’t skip greasing your mini loaf pan thoroughly. This will prevent any sticking and ensure your beautiful loaves pop out easily.

Spoon your all-purpose flour into the measuring cup and level it off with a straight edge. Scooping directly from the bag can pack too much flour, leading to dry loaves.

The toothpick test is your best friend for perfectly baked goods. If it comes out with a few moist crumbs, they’re likely done. If there’s wet batter, they need a few more minutes.

Allowing the loaves to cool properly on a wire rack ensures they don’t become soggy on the bottom and helps set their structure.
