Description
These moist and tender mini banana bread loaves are the perfect treat for any occasion, offering a soft crumb and rich flavor in every bite.
Ingredients
Cooking Spray
2 cups all-purpose flour
1/2 cup white sugar
1/4 cup packed light brown sugar
1 teaspoon baking soda
1/2 teaspoon kosher salt
3 very ripe bananas, mashed well (about 1 1/2 cups)
1/3 cup sour cream or plain yogurt
2 large eggs
1/4 cup vegetable oil
2 1/2 teaspoons vanilla extract
1 1/2 cups mix-ins of choice, such as chocolate chips, chopped nuts or blueberries
Instructions
1. Preheat your oven to 350F and spray eight mini loaf pans (4×2-inch) with cooking spray.
2. In a large bowl, combine the flour, white sugar, brown sugar, baking soda, and salt.
3. In a separate medium bowl, whisk together the mashed bananas, sour cream, eggs, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in your chosen mix-ins and then distribute the batter evenly into the prepared mini loaf pans.
4. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Allow the mini loaves to cool completely in the pans before removing them to serve.
Notes
Check your bananas for ripeness. If they are not quite ready, you can speed up the process by placing them in a brown paper bag for a day or two.
Do not overmix your batter once you combine the wet and dry ingredients. A few small streaks of flour are perfectly fine and will disappear during the baking process.
Use a high-quality cooking spray to ensure the loaves slide out of the pans without sticking, especially if you have added sticky mix-ins like chocolate chips.
Allowing the loaves to cool completely in the pans is essential for setting the structure, which prevents them from crumbling when you remove them.
