Ingredients

Scale

4 large whole wheat wraps or tortillas
1 cup hummus store-bought or homemade
1 cup cherry tomatoes halved
1 cup cucumber thinly sliced
1/2 cup red bell pepper thinly sliced
1/2 cup yellow bell pepper thinly sliced
1/4 cup red onion thinly sliced
1 cup baby spinach or romaine lettuce
1/3 cup feta cheese crumbled
1/4 cup kalamata olives sliced (optional)
2 tablespoons olive oil or lemon juice optional drizzle
Salt and black pepper to taste

Instructions

Prepare your vegetables by thinly slicing the cucumbers, cherry tomatoes, bell peppers, and red onion. You can use pre-sliced vegetables if you are short on time.

Place your whole wheat wraps or tortillas on a clean surface.

Spread a generous layer of hummus onto each wrap, leaving a small border around the edges.

Arrange your sliced vegetables, a handful of greens, and crumbled feta cheese over the hummus. Add olives or any other desired toppings.

Roll each wrap up tightly, like a burrito, tucking in the sides as you roll.

Cut the finished wraps in half using a sharp knife and serve right away or save for later.

Notes

Don’t overcrowd the pan: Ensure the vegetables and chickpeas are spread out in a single layer on the baking sheet. This allows them to roast properly and caramelize, rather than steam.

Uniform cutting: Try to cut the vegetables into similarly sized pieces. This ensures they cook evenly in the oven.

Sauce consistency: If your yogurt sauce is too thick, you can thin it out with a little extra lemon juice or a tablespoon of water until it reaches your desired consistency.

Herbs are key: Don’t skimp on the fresh herbs in the sauce! They provide that signature bright, fresh Mediterranean flavor.

Warm tortillas are best: Warming the tortillas makes them much more pliable and less likely to crack when you roll them up.
