Ingredients
- 4 slices of bread (Sourdough or sturdy white)
- 1/4 lb frozen chopped spinach
- 1 cup shredded mozzarella cheese, 1 oz crumbled feta
- 2 tbsp softened butter, 1 clove minced garlic
- 1/2 tbsp olive oil
- Seasoning: Red pepper flakes, salt, and black pepper to taste
Instructions
Spinach Filling: Sauté garlic and olive oil in a skillet. Add frozen spinach, salt, and pepper. Cook until moisture has completely evaporated (essential for crispiness).
Assembly: Butter one side of each bread slice. Layer mozzarella, crumbled feta, the dry garlic spinach, more mozzarella, and red pepper flakes between the unbuttered sides.
Grill: Heat a skillet over medium-low. Grill sandwiches for 3–4 mins per side, pressing gently with a spatula to fuse the layers.
Serve: Once golden-brown and molten, cut diagonally and serve immediately.
Notes
Moisture Control: Ensure the spinach is virtually dry before adding it to the bread. Any residual water will seep into the starch matrix and cause sogginess.
Low and Slow: Medium-low heat is vital. It allows the internal cheese to melt thoroughly without burning the exterior butter and bread.
