Ingredients
1.5 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1/2 tsp salt
1 cup canned pumpkin puree
1/2 cup vegetable oil
1 cup granulated sugar
2 large eggs
8 oz cream cheese, softened
1/4 cup granulated sugar (for swirl)
1 large egg yolk
1 tsp vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan, or line it with parchment paper for easy removal.
In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt. Set aside.
In a separate large bowl, whisk together the canned pumpkin puree, vegetable oil, granulated sugar, and eggs until well combined. Stir in the vanilla extract.
In a small bowl, beat the softened cream cheese with 1/4 cup granulated sugar and the egg yolk until smooth and creamy.
Pour about two-thirds of the pumpkin batter into the prepared loaf pan, spreading it evenly. Dollop spoonfuls of the cream cheese mixture over the batter. Top with the remaining pumpkin batter, spreading gently.
Using a knife or a skewer, gently swirl the cream cheese mixture into the pumpkin batter. Be careful not to over-swirl, or the colors will blend too much.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center of the bread comes out clean.
Let the bread cool in the pan for about 10 to 15 minutes before carefully inverting it onto a wire rack to cool completely.
