2 pounds chicken breasts, trimmed
Lemon Herb Marinade
1/4 cup olive oil, extra virgin
1/4 cup lemon juice
1 tablespoon dried basil
1 tablespoon dried parsley
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes


Instructions

1. Place the chicken breasts in a large resealable plastic bag with all of the marinade ingredients. Seal the bag, pressing out any extra air, and let the chicken marinate in the refrigerator for at least 1 hour and up to 12 hours.

2. To grill, place the marinated chicken on a preheated grill over medium heat. Grill for 5 to 7 minutes per side, or until the chicken is fully cooked through and the juices run clear.

3. For stove-top cooking, heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the chicken to the hot pan in a single layer and cook for 5 minutes, then flip and cook for an additional 5 minutes until firm and the juices run clear.

Notes

While 30 minutes is the minimum for flavor, marinating for 2-4 hours yields even more delicious results without compromising the chicken’s texture.

Maintaining a consistent medium-high heat is key. If your grill runs too hot, the outside might char before the inside is cooked. If it’s not hot enough, you won’t get those beautiful grill marks.

The most reliable way to ensure your chicken is perfectly cooked is by using an instant-read meat thermometer. Insert it into the thickest part of the chicken, avoiding bone if any. It should register 165°F (74°C).

Always ensure your grill grates are clean and lightly oiled before placing the chicken on them. This will help prevent the chicken from sticking and tearing when you flip it.
