A vibrant pasta dish featuring tender shrimp, zesty lemon, and savory garlic butter, perfect for a quick and satisfying weeknight meal.
Ingredients
1½ lbs Jumbo or large shrimp
16 ounces angel hair pasta
5 to 6 cloves garlic
2 tablespoon butter
2 tablespoon olive oil may add more to the pasta if desired
½ cup grated parmesan cheese
1 cup fresh spinach leaves
juice from 2 lemons
salt and pepper to taste
Instructions
1. Cook the Pasta In a large pot, boil water, then add angel hair pasta until tender, about 5 to 7 minutes. Reserve a cup of pasta water, then drain the pasta.
2. Prepare the Shrimp Peel, devein, and dry the shrimp. Mash the garlic with salt.
3. Saut the Shrimp Heat olive oil and butter in a nonstick skillet. Add shrimp in a single layer. Once pink, add mashed garlic. Flip shrimp, then add lemon juice and cook until done (2 to 3 minutes).
4. Combine Pasta and Shrimp Remove shrimp from the skillet. Add spinach and pasta water to the pan. Cook until spinach wilts. Add pasta, parmesan, and shrimp. Mix well. Add parsley if desired.
Notes
Use a large skillet to ensure the shrimp and pasta have plenty of room.
Don’t overcrowd the skillet with too many shrimp at once.
Taste the sauce and adjust seasonings as needed, adding more salt, pepper, or lemon juice to your preference.
Serve immediately after tossing the pasta with the sauce for the best texture and flavor.
If your sauce seems too thick, add a little of the reserved pasta water.
