For the Sloppy Joes

  • 1 lb lean ground turkey, 1 small onion, 1 small bell pepper, 1 carrot (diced/shredded)
  • 3 cloves garlic, 6 oz tomato paste, 3/4 cup broth
  • 2 tbsp coconut aminos, 2 tsp brown sugar, 1 tbsp Dijon mustard
  • 1 tbsp ACV, 1/2-1 tsp salt, 1/2 tsp smoked paprika, 1/4 tsp pepper

For the Optional Slaw

  • 2 cups coleslaw mix, 2 tbsp mayo, 1 tbsp ACV
  • 1 tsp honey, 1/4 tsp garlic powder, salt/pepper

Instructions

Sauté: Heat oil in a large skillet. Brown turkey with onion, pepper, carrot, and garlic for 10 mins until turkey is cooked and veggies are tender.

Sauce: Whisk tomato paste, broth, coconut aminos, sugar, mustard, vinegar, and spices until smooth.

Simmer: Pour sauce into skillet. Stir and simmer for 5 mins until thick and glossy.

Slaw: Toss coleslaw mix with mayo, vinegar, honey, and garlic powder. Season to taste.

Assemble: Pile turkey onto toasted buns and top with a generous scoop of slaw.

Notes

Hidden Veggies: Shred carrots and peppers with a box grater for picky eaters; they will disappear into the sauce while adding moisture.

Coconut Aminos: This is a soy-free, slightly sweeter alternative to soy sauce. If using regular soy sauce, use 1 tbsp and adjust for saltiness.

Storage: The meat mixture freezes well for 3 months. Thaw in the fridge overnight before reheating on the stovetop.
