For Meatballs
pound lean ground beef
4 green onions (chopped)
½ cup breadcrumbs (such as Panko)
3 cloves garlic (minced)
1 egg
2 tablespoon Gochujang paste (or Sriracha)
1 teaspoon ground ginger
1 teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
For Spicy Apricot Glaze
½ cup apricot jam
1 tablespoon soy sauce
2 tablespoons Gochujang paste (or Sriracha)


Instructions

Preheat oven to 400F. Line a baking sheet with parchment paper.

In a bowl, combine meatball ingredients. Mix with your hands. Form into 1-inch balls. Place on the baking sheet and bake for 20-25 minutes, until cooked.

Whisk glaze ingredients in a bowl. Add the cooked meatballs and toss to coat.

Garnish with chopped chives, if desired. Serve over rice or as an appetizer.

Notes

Use a meat thermometer to ensure the meatballs are cooked through. The internal temperature should reach 160°F.

Don’t overcrowd the baking sheet. If necessary, bake the meatballs in batches to allow for even cooking.

Let the meatballs rest for a few minutes after baking before tossing them in the sauce. This allows them to retain their moisture.

Adjust the sweetness of the sauce to your liking by adding more or less brown sugar.
