Description
This King Ranch Chicken Casserole is a comforting and flavorful dish that’s perfect for any weeknight meal or potluck. It features tender chicken and a creamy, savory sauce layered with soft corn tortillas and topped with melty cheddar cheese, all baked to golden perfection.
Ingredients
1 medium green bell pepper (chopped)
1 medium yellow onion (chopped)
1 tablespoon vegetable oil
1 can cream of chicken soup ((10.5 ounce can))
1 can cream of mushroom soup ((10.5 ounce can))
1 can ROTEL diced tomato and green chiles ((10 ounce can))
1 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon ground black pepper
3 cups chopped cooked chicken (I use rotisserie)
8 corn tortillas (torn into pieces)
2 cups grated cheddar cheese
Instructions
Preheat your oven to 375F.
Heat vegetable oil in a large skillet over medium heat. Add chopped onions and bell peppers and cook for 4-6 minutes until softened.
Stir in cream of chicken soup, cream of mushroom soup, Rotel tomatoes with their juices, chili powder, garlic powder, salt, and pepper. Mix well, then stir in the cooked chicken. Remove from heat.
Spread half of the torn corn tortillas in a greased 9×13 inch baking dish. Top with half of the chicken mixture and half of the cheddar cheese. Repeat the layers: tortillas, chicken mixture, and cheese.
Bake uncovered for 20-30 minutes, or until the edges are bubbly and the cheese is melted and golden.
Notes
Rotisserie Chicken is Your Friend: For the ultimate shortcut, a store-bought rotisserie chicken is perfect. It’s already cooked and seasoned, saving you valuable time.
Don’t Overcook the Veggies: You want the onions and peppers to soften, not turn mushy, as they will continue to cook in the oven.
Even Layering is Key: When assembling, try to spread the tortilla and chicken layers as evenly as possible for consistent texture and flavor in every bite.
Watch the Bake Time: Ovens can vary, so keep an eye on your casserole during the last 10 minutes of baking to ensure the cheese melts and browns perfectly without burning.
