  • Total Time: 35-40 minutes
  • Yield: 6 servings 1x

Description

Elevate your side dish game with these incredibly delicious Hot Honey Roasted Carrots! They offer a perfect balance of sweet and spicy, with wonderfully tender carrots that have beautifully caramelized edges.

Ingredients

Scale

500 ml honey
2 tbsp chilli flakes
1 tbsp tabasco
2 tbsp lemon juice
6 large carrots (peeled and sliced)
5 tbsp butter (unsalted)
4 garlic cloves (minced)
2 tbsp hot honey
salt and pepper
fresh parsley to serve (optional)

Instructions

Preheat your oven to 200C / 390F.
Make the hot honey by combining honey, chili flakes, Tabasco, and lemon juice in a pot over medium heat. Cook until bubbling and runny, then set aside. You can store any extra hot honey in a sterilized jar for later.
Melt the butter in an oven-proof pan over medium heat. Add the minced garlic and cook for about 2 minutes, stirring frequently.
Toss the sliced carrots with the butter and garlic in the pan. Drizzle with the prepared hot honey, salt, and pepper. Stir to coat the carrots, then bake for 20-25 minutes, or until they are golden and caramelized.
Garnish with fresh parsley if desired, and serve right away.

Notes

Try to slice your carrots into pieces that are roughly the same thickness. This will help them cook evenly, preventing some from becoming too mushy while others remain firm.

Keep a close eye on the minced garlic when sautéing it in the butter. It can go from fragrant to burnt very quickly, which can impart a bitter taste.

Look for those beautiful deep golden-brown edges on the carrots. This is the sign of perfect caramelization, which means maximum flavor.

The best way to check if your carrots are ready is to pierce one with a fork. It should go in easily but still offer a slight resistance, indicating a tender, not mushy, texture.
