  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

These Hot Honey Grilled Chicken Bowls are a symphony of sweet and spicy flavors, featuring tender, juicy grilled chicken drizzled with a luscious hot honey glaze. They’re a vibrant, satisfying meal with layers of textures and tastes that make every bite an absolute delight.

Ingredients

Scale

2 pounds of boneless, skinless chicken breast halves
Extra Virgin Olive Oil
salt and pepper
hot honey (you’ll need several big drizzles for this)
enough rice for each bowl
your bowl toppings (avocado, pico, chopped green onions, salsa…whatever you have)
Olive Oil
garlic powder
smoked paprika
Salt & Black Pepper
Cooked Rice
Avocado
Red Onion
Cilantro

Instructions

Preheat your grill to medium-high heat.

Marinate the chicken in advance. In a large bag, combine chicken, a drizzle of olive oil, salt, pepper, and several drizzles of hot honey. Seal and coat the chicken well. Refrigerate or grill immediately.

Grill the marinated chicken breasts for about 8 minutes per side, or until the juices run clear. Remove from the grill and assemble your bowls.

In each bowl, add cooked rice, grilled chicken, and your favorite toppings like avocado, pico, green onions, and salsa. Finish with a drizzle of hot honey. Serve and enjoy.

Notes

Prep Ahead: Marinating the chicken in advance, even for just 15 minutes, amps up the flavor!

Grill Control: Keep a close eye on the chicken while grilling to prevent it from drying out.

Temperature Matters: Use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F (74°C).

Resting is Key: Letting the chicken rest after grilling is crucial for juicy, tender results.

Customize: Feel free to add and subtract toppings to make the bowls your own.
