Ingredients
4 (6-ounce) skin-on salmon fillets
1/4 cup honey
3 tablespoons hot water
3 tablespoons freshly squeezed lemon juice
6 cloves minced garlic (about 2 tablespoons)
1 1/4 teaspoons smoked paprika
3/4 to 1 teaspoon kosher salt (divided)
1/8 teaspoon cayenne pepper
2 tablespoons extra virgin olive oil
1/4 teaspoon ground black pepper
Chopped fresh parsley or green onion (for serving)
Lemon wedges (optional, for serving)
Instructions
Preheat your oven to 450 degrees F with a rack in the center. Let the salmon sit at room temperature for 10 minutes, then pat it dry.
Whisk together honey, hot water, lemon juice, garlic, smoked paprika, 3/4 teaspoon salt, and cayenne pepper in a bowl.
Heat an ovenproof skillet over medium-high heat.
Sprinkle salmon with 1/4 teaspoon salt and 1/4 teaspoon black pepper.
Add olive oil to the hot skillet, swirl, and add the salmon, skin-side up.
Cook for 4 minutes until browned and easily released, then carefully turn the fillets over.
Turn off the heat and pour the honey mixture over the salmon, basting for 1 minute.
Transfer the skillet to the oven and bake for 4 to 5 minutes, or until the salmon flakes easily. Avoid overcooking to keep it moist.
Garnish with parsley or green onion and lemon wedges, if desired, and spoon extra sauce over the top.
Notes
Patting your salmon dry before searing is essential for achieving a beautiful golden-brown crust.
Ensure your skillet is properly heated before adding the salmon. This prevents sticking and promotes a good sear.
Salmon cooks quickly. Keep an eye on it in the oven and remove it as soon as it flakes easily to maintain its moistness.
While this recipe is fast, letting the salmon rest for a minute or two after coming out of the oven can help redistribute its juices.
