Ingredients
1 cup heavy whipping cream (must be very cold)
2 tablespoons powdered sugar (or superfine sugar)
1/2 teaspoon pure vanilla extract
Instructions
1. Chill a metal mixing bowl and the whisk attachment of your electric mixer in the freezer for 15 minutes. This helps create stable whipped cream.
2. Pour the very cold heavy cream into the chilled bowl.
3. Start whisking on medium-low speed until the cream begins to thicken and bubble slightly, about 1 minute.
4. Increase the speed to medium-high and slowly add the powdered sugar and vanilla extract.
5. Keep whisking until the cream forms ‘soft peaks’ where the peak curls over when the whisk is lifted.
6. For ‘stiff peaks’ suitable for piping, whisk a few more seconds until the peaks stand straight up when the whisk is lifted. Be careful not to over-whisk, as it can turn into butter.
7. Serve right away, or cover and chill for up to 2 hours before serving.

Always ensure your heavy whipping cream, bowl, and whisk are thoroughly chilled. Cold ingredients are essential for achieving the best volume and texture.
Whipped cream can go from perfectly fluffy to over-whipped very quickly. Keep a close eye on it during the last minute or two of beating.
Taste your whipped cream as you go if you are unsure about the sweetness. You can add a touch more powdered sugar if you prefer it sweeter, but do so before it reaches stiff peaks.
Using powdered sugar is recommended because it dissolves more readily than granulated sugar, preventing a grainy texture.
