Ingredients
1 sheet frozen puff pastry, thawed
8 fresh ripe figs, stemmed and quartered lengthwise
1/4 cup wildflower honey
1/2 teaspoon fresh thyme leaves
1 large egg, beaten with 1 tbsp water (for wash)
2 tablespoons mascarpone cheese (optional)
1 tablespoon crushed pistachios (optional garnish)
Instructions
1. Warm your oven to 400F (200C) and ready a baking sheet with parchment paper.
2. Gently unroll the thawed puff pastry onto the prepared baking sheet. Using a sharp knife, lightly mark a 1-inch border around the pastry’s edge, without cutting all the way through.
3. Arrange the quartered figs in a single layer inside the scored border, pressing them softly into the pastry.
4. Brush the 1-inch border with the egg wash to help it turn a lovely golden brown.
5. Bake for 20 to 25 minutes, or until the pastry is beautifully puffed and a rich golden color.
6. Take the tart out of the oven. While it’s still warm, pour the honey evenly over the figs and scatter the fresh thyme leaves on top.
7. If you wish, add small dollops of mascarpone cheese to the center and finish with a sprinkle of crushed pistachios.
8. Enjoy this tart warm or at room temperature.
Notes
For the flakiest crust, ensure your puff pastry is well-chilled before you start and that your oven is fully preheated.
When arranging the figs, don’t overcrowd them too much. Allow a little space for the honey to seep between them.
