Hearty Beef Stew A Cozy Classic

  • Total Time: Approximately 1 hour 30 minutes to 2 hours
  • Yield: Approximately 6-8 servings 1x

Description

This hearty beef stew is the ultimate comfort food, brimming with tender chunks of beef, robust vegetables, and a rich, savory broth that’s perfect for warding off a chill. It’s the kind of dish that fills your home with an irresistible aroma and warms you from the inside out.

Ingredients

Scale

2 lbs beef chuck roast, cut into 1-inch cubes
3 tbsp all-purpose flour
2 tbsp olive oil
1 large yellow onion, chopped
3 cloves garlic, minced
4 cups low-sodium beef broth
1 tbsp apple cider vinegar
2 tbsp tomato paste
1 tsp Worcestershire sauce
1 tsp dried thyme
4 medium carrots, cut into 1-inch rounds
3 stalks celery, chopped
1.5 lbs Yukon gold potatoes, cubed
1 cup frozen peas
Salt and black pepper to taste

Instructions

Begin by coating the beef cubes with flour, salt, and pepper.
Next, sear the beef in a Dutch oven until golden brown and set aside.
Saut the onion and garlic before whisking in the tomato paste, broth, vinegar, Worcestershire sauce, and thyme.
Return the beef to the pot, bring to a boil, then simmer covered for one hour.
Add the carrots, celery, and potatoes, and continue to simmer until tender.
Finally, stir in the peas and cook for a few minutes before serving.

Notes

Beef Chuck Roast – This cut is ideal for stew because its marbling breaks down during the long cooking process, resulting in incredibly tender and flavorful meat. Cutting it into 1-inch cubes ensures even cooking.

All-Purpose Flour – This helps to lightly coat the beef, which aids in browning and also slightly thickens the stew as it cooks.

Beef Broth – Opt for a good quality, low-sodium beef broth so you can better control the saltiness of the final dish.

Yukon Gold Potatoes – These potatoes offer a lovely creamy texture and hold their shape well during simmering, making them perfect for stews.

Frozen Peas – These add a pop of color and a touch of sweetness at the very end, brightening up the deep flavors of the stew.

For a deeper, richer flavor, consider adding a splash of red wine during the broth stage. If you’d like to introduce more earthy notes, mushrooms are a fantastic addition, sautéed alongside the onions. For a touch of sweetness, a diced parsnip or sweet potato could be added with the other root vegetables.
