Ingredients
4 salmon fillets (about 6 oz each), skin-on
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 teaspoon chili powder
For the Mango Salsa:
2 large ripe mangos, peeled, pitted, and diced
1/4 cup red onion, finely minced
1 jalapeño, seeded and finely diced
1/4 cup fresh cilantro, roughly chopped
Juice of 1 large lime
A pinch of salt
Instructions
1. Prepare the salsa. In a mixing bowl, combine the diced mango, minced red onion, diced jalapeo, chopped cilantro, lime juice, and a pinch of salt. Gently toss together, cover, and chill for at least 15 minutes.
2. Heat your grill to medium-high heat. Lightly oil the grill grates.
3. Pat the salmon fillets completely dry using paper towels. Rub the flesh side of each fillet with olive oil.
4. Mix the salt, pepper, and chili powder in a small bowl. Sprinkle this mixture evenly over the flesh side of the salmon.
5. Place the salmon on the hot grill, flesh-side down. Cook for 4 to 5 minutes until grill marks appear.
6. Carefully flip the salmon to the skin side down. Cook for another 4 to 5 minutes, or until the salmon is opaque and flakes easily.
7. Remove the salmon from the grill and let it rest for 3 minutes.
8. Serve the salmon topped with the chilled mango salsa.
