2 tsp Sea Salt
Garlic Herb Sauce
2/3 cup Extra Virgin Olive Oil
4 cloves garlic crushed
1/3 cup chopped fresh parsley
2 tbsp chopped fresh rosemary
1/2 tsp Pepper
1/2 tsp Sea Salt


Instructions

1. Slice the eggplant into half-inch thick pieces, keeping the skin on to help it hold its shape and get a crispy crust.

2. Arrange the eggplant slices in a single layer on a baking sheet. Sprinkle generously with salt on both sides and let sit for at least 15 minutes to release moisture.

3. Heat your grill to medium heat. Gently wipe each eggplant slice with a paper towel to remove excess salt and moisture.

4. In a bowl, mix together the olive oil, crushed garlic, chopped parsley, chopped rosemary, pepper, and salt for the sauce.
