Ingredients
4 thin boneless skinless chicken breasts
2 teaspoons olive oil, or avocado oil
2 teaspoons chili powder
salt to taste
1 cup diced mango
1 cup diced avocado
1 lime, juiced
1/2 cup minced red bell pepper
1/4 cup chopped cilantro
Instructions
1. In a bowl, mix together the diced mango, diced avocado, minced red bell pepper, and chopped cilantro. Stir in the lime juice and season with salt to your liking. Set this salsa aside.
2. Preheat your grill to medium-high heat.
3. Lightly coat the chicken breasts with olive oil and season generously with chili powder and salt.
