Description
Imagine sinking your teeth into a tender, buttery cake, perfectly spiced and topped with a sweet, crumbly streusel. This coffee cake recipe is a time-tested classic, delivering a slice of pure comfort in every bite.
Ingredients
2 cups buttermilk
1 tsp baking powder
4 cups flour
2 cups sugar
1 tsp salt
2 tsp baking powder
1/2 cup shortening
Cinnamon Topping
3/4 cup of the reserved cake batter
1 cup butter
1 cup brown sugar
1 Tbsp cinnamon
Instructions
Preheat oven to 350°F and grease and flour a 9×13 inch baking pan. This ensures the cake doesn’t stick and makes for easier removal once baked.
In a medium bowl, whisk together the flour, brown sugar, cinnamon, and cold, cubed butter until the mixture resembles coarse crumbs. Set this aside.
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
Pour half of the cake batter into the prepared baking pan and spread evenly. Sprinkle half of the streusel topping over the batter. Then, pour the remaining batter over the streusel, and top with the remaining streusel.
Bake in the preheated oven for 35 to 40 minutes, or until a wooden skewer inserted into the center comes out clean.
Notes
Use room temperature ingredients. This helps them combine more easily and evenly.
Don’t overmix the batter; mix until just combined for a tender crumb.
Check for doneness with a wooden skewer.
Let the coffee cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
For an extra touch, let the cake cool completely before slicing to ensure the topping sets.
