Ingredients
4 veal cutlets or boneless skinless chicken breasts (about 5–6 oz each)
1/2 cup all-purpose flour
2 large eggs
1 tablespoon milk or water
1.5 cups plain, unseasoned fine breadcrumbs
1 teaspoon kosher salt
1/2 teaspoon finely ground black pepper
1/2 cup neutral oil (like canola or peanut oil) for shallow frying
2 tablespoons unsalted butter
1 large lemon, cut into wedges (for serving)
Fresh parsley for garnish
Instructions
Place each cutlet or chicken breast between plastic wrap and gently pound it to an even 1/4-inch thickness with a meat mallet.
Season both sides of the pounded meat with salt and pepper.
Prepare three shallow dishes: one with flour, one with whisked eggs and liquid, and one with breadcrumbs.
Coat each cutlet by first dredging in flour, then dipping in egg wash, and finally pressing firmly into breadcrumbs. Place breaded cutlets on a wire rack.
Heat neutral oil in a large skillet over medium-high heat until shimmering.
Fry 1 to 2 breaded cutlets at a time (do not overcrowd), adding butter to the pan.
Cook for 2 to 3 minutes per side until deep golden brown and crispy, swirling the pan gently to wash hot oil over the top.
Transfer cooked schnitzels to a paper towel-lined plate to drain.
Serve immediately with fresh parsley and lemon wedges.
Notes
Pounding the cutlets to an even thickness is key for them to cook uniformly and become perfectly tender.
Frying in batches ensures the oil temperature stays high enough to achieve a crispy crust, rather than steaming the meat and making it soggy.
A properly heated skillet is vital for that signature golden, crunchy exterior. If the oil isn’t hot enough, the coating will absorb too much oil and become greasy.
Using a wire rack instead of paper towels allows air to circulate, keeping the bottom of the schnitzel crisp.
