Garlic Studded Roast Beef

Garlic Studded Roast Beef

  • Total Time: Approximately 3 to 3.5 hours
  • Yield: Approximately 14 servings 1x

Description

This Garlic Studded Roast Beef recipe elevates a classic comfort dish with fragrant garlic and a perfectly seasoned crust, resulting in a tender, juicy, and utterly delightful centerpiece for any celebration. Served with a simple pan gravy, it’s an impressive yet achievable meal.

Ingredients

Scale

7 lb (3.18 kg) Beef Premium Oven Roast (Prime Rib, Strip Loin or Rib Roast)
8 cloves garlic, cut into thin slivers
2 tbsp (30 mL) Worcestershire sauce or grainy mustard (optional)
Salt and pepper
Simple Pan Gravy (recipe follows)

Instructions

Make small cuts all over the roast and press garlic slivers into them. Rub the roast with Worcestershire sauce or pat it dry and season with salt and pepper.

Place the roast on a rack in a roasting pan. Insert an oven-safe meat thermometer into the center. Roast in a 450F (230C) oven for 10 minutes. Then, reduce the oven temperature to 275F (140C) and continue roasting until the thermometer reaches 135F (57C) for medium-rare to medium, which should take about 2-3/4 to 3-1/4 hours.

Take the roast out of the oven. Loosely cover it with foil and let it rest for 15 to 30 minutes before slicing. Prepare the Simple Pan Gravy if you’d like.

For the gravy, heat the roast drippings in a pan over medium-high heat. Add a splash of red grape juice and stir to lift any browned bits from the pan’s bottom.

Pour in 2 cups (500 mL) of beef broth. You can strain it and skim off any fat if you prefer, then return it to the pan.

To thicken, either simmer until the broth reduces for an au jus style sauce, or whisk in a mixture of 1 tablespoon each of cornstarch and cold water.

Season the gravy to your liking. You can add a splash of heavy cream, balsamic vinegar, or red grape juice vinegar if desired.

Notes

When inserting the garlic slivers, try to distribute them evenly across the roast for consistent flavor.

Do not guess the doneness of your roast. An oven-safe meat thermometer is your most reliable tool for achieving perfect results every time.

Skipping the resting period will result in juices running out onto your cutting board, leaving your roast drier. Be patient!

The fond (browned bits) in the bottom of your roasting pan is pure gold for gravy flavor. Make sure to incorporate it.

Ovens can vary. Familiarize yourself with your oven’s quirks and adjust cooking times slightly if needed, always prioritizing the internal temperature.
