Description
These Garlic Butter Beef Sliders are a delightful explosion of savory, tender roast beef, sweet caramelized onions, and melty cheese, all nestled in soft slider buns with a luscious garlic butter topping. They’re impossibly easy to assemble and utterly irresistible.
Ingredients
2 tablespoons unsalted butter
1 tablespoon olive oil
3 large yellow onions (thinly sliced)
1/2 teaspoon kosher salt
1 teaspoon brown sugar (optional, helps speed up caramelization)
2 tablespoons beef broth (for deglazing)
1 large egg yolk (room temperature)
1 teaspoon Dijon mustard
1 garlic clove (finely grated or minced)
1 tablespoon fresh lemon juice
1/2 cup light olive oil or neutral oil
Kosher salt (to taste)
1/4 cup unsalted butter
1 tablespoon Better than Bouillon Beef Base
2 cups beef broth
2 teaspoons Worcestershire sauce
12 slider buns (sliced in half (Hawaiian rolls, preferred))
1/4 cup homemade garlic aioli or mayonnaise
1/2 pound deli roast beef (thinly sliced)
12 slices melty cheese (like provolone, Swiss, or muenster)
1/2 cup shredded mozzarella cheese
2 cups caramelized onions
6 tablespoons unsalted butter (melted)
1 teaspoon Worcestershire sauce
1 tablespoon poppy seeds
1 tablespoon white sesame seeds
1/2 tablespoon garlic powder
1/2 tablespoon dried minced onion
1/2 teaspoon kosher salt and freshly cracked black pepper
Instructions
Melt butter and olive oil in a skillet over medium-low heat. Add onions, salt, and brown sugar. Cook slowly until soft, deep golden brown, and jammy, about 35-45 minutes. Stir in beef broth to deglaze, then set aside.
Whisk egg yolk, Dijon mustard, minced garlic, and lemon juice in a small bowl until smooth. While blending, slowly stream in oil until thickened into aioli. Season with salt and set aside.
Assemble the sliders: Spread a generous layer of your homemade garlic aioli onto the toasted bottom buns. Evenly distribute the thinly sliced roast beef over the aioli. Next, layer on your slices of melty cheese, followed by a sprinkle of shredded mozzarella cheese over the top. Finally, spoon the deeply caramelized onions evenly over the cheese.
Add the topping: Place the top halves of the slider buns onto the assembled sliders. In a small bowl, combine the 6 tablespoons of melted butter with 1 teaspoon of Worcestershire sauce, poppy seeds, white sesame seeds, garlic powder, dried minced onion, and 1/2 teaspoon of kosher salt and freshly cracked black pepper. Brush this glorious mixture generously over the tops of the buns.
Bake to perfection: Loosely cover the baking sheet with aluminum foil. Bake in the preheated oven for 10 minutes. Then, remove the foil and continue baking for another 5-10 minutes, or until the tops of the buns are beautifully golden brown and the cheese is perfectly melted and gooey.
Serve and enjoy: Once baked, use a serrated knife to carefully slice between the rolls, separating each individual slider. Serve these warm, with small bowls of the prepared au jus on the side for dipping.
Notes
Patience with onions: Caramelizing onions truly requires low and slow heat. Rushing this step can lead to burnt or unevenly cooked onions, so give them the time they deserve for that deep, sweet flavor.
Don’t overcrowd: When assembling, ensure your roast beef is spread evenly. Overstuffing can make the sliders difficult to eat and may cause fillings to spill out during baking.
Butter wash magic: The garlic butter mixture brushed on top of the buns is crucial for that irresistible golden crust and incredible flavor. Be generous!
Melted cheese bliss: Keep an eye on the sliders during the final baking stage. You want the cheese perfectly melted and bubbly, but not burnt.
