1/4 cup olive oil
1 clove garlic,, cut in half
For the Salad
2 cups fresh grape or cherry tomatoes,, diced, (or 3 to 4 Roma tomatoes, diced)
1/4 cup freshly grated parmesan cheese
1/4 cup fresh basil ribbons,, (stack several basil leaves one on top of the other, roll them up tightly, and then slice into thin ribbons)
2 cloves garlic,, minced
salt and fresh ground pepper,, to taste
1 tablespoon olive oil
1 tablespoon balsamic vinegar
balsamic glaze,, optional, for topping
Instructions
1. Preheat your oven to 400F and line a baking sheet with parchment paper or foil.
2. Lightly brush one side of each bread slice with olive oil and place them oiled-side down on the prepared baking sheet.
3. Bake the bread for 8 to 10 minutes until pleasantly toasted, watching closely to prevent burning.
4. Remove from the oven, carefully flip the slices over, and rub the cut side of the garlic clove over the warm bread, then set aside.
5. In a medium mixing bowl, combine the diced tomatoes, parmesan cheese, basil ribbons, and minced garlic with a pinch of salt and pepper.
6. Stir in the olive oil and balsamic vinegar, mixing well, and adjust the seasoning to your liking.
7. Spoon the tomato mixture evenly over the toasted bread slices, drizzle with balsamic glaze if desired, and serve immediately.
Notes
Don’t Overcrowd the Baking Sheet: Ensure your bread slices have enough space on the baking sheet so they toast evenly and become golden and crisp, not soft and steamy.
Freshness is Key: For the best flavor, use the freshest ingredients possible, especially for the tomatoes and basil.
Toast to Perfection: Keep an eye on the bread while it’s in the oven; toasting times can vary depending on your oven. You want it beautifully golden and firm.
Assemble Just Before Serving: To prevent the bread from becoming soggy, it’s best to spoon the tomato topping onto the toasted baguette slices right before you plan to serve them.
