Fresh Tabbouleh Salad

  • Total Time: 25 minutes

Description

Tabbouleh is a vibrant and refreshing Middle Eastern salad that bursts with fresh herbs, bright citrus, and hearty grains. It’s the perfect side dish to any meal, offering a delightful contrast of textures and flavors that will leave you feeling revitalized. This bright, herbaceous, and zesty tabbouleh salad is a celebration of fresh ingredients, perfect for any occasion.

Ingredients

Scale

½ cup uncooked bulgur
3 tbsp. olive oil
3 tbsp. lemon juice
½ tsp. sea salt or to taste
¼ tsp. pepper or to taste
2 medium tomatoes, diced
½ cup finely chopped parsley
½ cup finely chopped scallions
¼ cup finely chopped mint

Instructions

Cook or steep the bulgur according to package directions, then let it cool and set aside.

In a medium bowl, combine the olive oil, lemon juice, salt, and pepper. Whisk until well blended.

Add the cooled bulgur, diced tomatoes, chopped scallions, parsley, and mint to the bowl with the dressing.

Mix all the ingredients together thoroughly and serve.

Notes

Some prefer to rinse their bulgur wheat under cold water before cooking to remove any excess starch, which can lead to a lighter texture.

Ensure your tomatoes and cucumbers are well-drained after chopping to prevent the salad from becoming watery.

Toss the ingredients gently to avoid bruising the fresh herbs and to keep the bulgur from becoming mushy.

The taste of lemons can vary, so always taste and adjust the salt, pepper, and lemon juice at the end.
