Ingredients
1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 1/4 cups whole milk
1 large egg
2 tablespoons unsalted butter, melted and slightly cooled
1/2 teaspoon pure vanilla extract
3/4 cup unsalted macadamia nuts, roughly chopped and lightly toasted
Butter or neutral oil for greasing the pan
Warm maple syrup for serving
Instructions
1. In a large bowl, combine the flour, sugar, baking powder, and salt.
2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
3. Pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula until just combined, aiming for a few small lumps for fluffiness.
4. Gently stir in the chopped, toasted macadamia nuts.
5. Heat a large skillet or griddle over medium heat and lightly grease it with butter or oil.
6. Pour about 1/4 cup of batter for each pancake onto the hot skillet, leaving space between them.
7. Cook for about 2 to 3 minutes, until bubbles form on top and the edges look dry.
8. Flip the pancakes carefully and cook for another 1 to 2 minutes until golden brown and cooked through.
9. Move the cooked pancakes to a warm plate and continue with the rest of the batter.
10. Serve right away with warm maple syrup and extra macadamia nuts.
Notes
Don’t Overcrowd the Pan: Cook pancakes in batches, leaving enough space between them so they cook evenly and are easy to flip.
Consistent Heat: Maintain a medium heat for cooking. If your griddle is too hot, the outside will burn before the inside is cooked. If it’s too cool, the pancakes may not brown properly.
The Art of the Flip: Wait for those bubbles to appear on the surface and the edges to look set before attempting to flip. A gentle slide of your spatula underneath should confirm it’s ready to turn.
Keep Them Warm: To serve a whole stack at once, place cooked pancakes on a baking sheet in a warm oven set to its lowest temperature.
