These adorable sugar cookies are soft, pillowy, and perfectly sweet, just like the ones you remember from your childhood. They’re decorated with fun circus animal crackers for an extra touch of whimsy.
Ingredients
3/4 cup unsalted butter softened at room temperature
3/4 cup granulated sugar
1 whole egg
1 egg yolk
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons nonpareil sprinkles
1/4 cup crushed circus animal cookies plus 12 cookies to put on top
4 ounce white chocolate
1/2 teaspoon coconut oil
Instructions
Preheat the oven to 350 degrees F and prepare cookie sheets with parchment paper or nonstick spray.
Using an electric mixer, cream the softened butter and sugar until light and fluffy, about 2 minutes.
Incorporate the egg, egg yolk, and extracts until just combined, scraping down the bowl as needed.
Mix in the flour, baking powder, and salt. Once a dough forms, add the sprinkles and cookie pieces, mixing until just combined.
Scoop 1/4 cup of dough, roll into a ball, and place on prepared sheets, leaving space between cookies. Gently flatten each cookie.
Bake for 8-9 minutes until the centers are puffed but not browned.
Let cookies cool on the sheet for 10 minutes, then transfer to a rack.
Melt the white chocolate chips and coconut oil in the microwave. Spoon the melted chocolate onto each cookie, top with a whole circus animal cookie, sprinkles, and crushed cookies. Enjoy.
