Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
1 cup buttermilk
2 large eggs, beaten
1/2 cup (1 stick) unsalted butter, melted and cooled slightly
Instructions
First, preheat your oven to 400F and prepare your cast iron skillet or baking dish.
Next, combine the dry ingredients in a large bowl.
In another bowl, whisk together the buttermilk, eggs, and melted butter.
Gently fold the wet ingredients into the dry until just mixed, then pour the batter into your prepared pan.
