Ingredients
1 pound ground chicken
4 ounces feta cheese, crumbled
1/2 cup panko breadcrumbs
1/4 cup chopped fresh parsley
1/4 cup chopped fresh oregano
1 teaspoon lemon zest
1 large egg
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 375°F (190°C). Lightly grease a baking sheet or line with parchment paper.
In a large bowl, gently combine ground chicken, feta cheese, breadcrumbs, parsley, oregano, lemon zest, egg, salt, and pepper until just combined.
Roll the mixture into 1-inch meatballs. Place on the prepared baking sheet, leaving some space between them.
Bake for 20-25 minutes, or until cooked through and slightly browned, and a meat thermometer inserted into the center of a meatball registers 165°F (74°C).
Remove the meatballs from the oven and let them rest for a few minutes before serving.
Notes
Use a cookie scoop: For perfectly sized meatballs, use a cookie scoop to portion out the mixture.
Don’t overcrowd the pan: If needed, bake the meatballs in batches to ensure even cooking.
Check for doneness: Use a meat thermometer to ensure the meatballs have reached an internal temperature of 165°F (74°C).
Season generously: Don’t be shy with the salt and pepper; proper seasoning is key to flavorful meatballs.
Let the meatballs rest: Allowing the meatballs to rest for a few minutes after baking helps them retain their delicious juiciness.
