These flaky buttermilk biscuits are incredibly tender, moist, and buttery, made from scratch for a truly satisfying homemade treat. Perfect for breakfast, brunch, or dinner.
Ingredients
2.5 cups all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tbsp granulated sugar
1/2 cup (1 stick) unsalted butter, cold and cubed
1 cup cold real buttermilk
2 tbsp melted butter (for brushing)
Instructions
Preheat your oven to 425F and line a baking sheet with parchment paper.
In a large bowl, combine flour, baking powder, baking soda, salt, and sugar.
Cut in cold butter until the mixture resembles coarse crumbs.
Gently stir in cold buttermilk until the dough just comes together.
On a floured surface, pat the dough into a rectangle, fold it in half four times for layers, and pat to 3/4 inch thickness.
Cut out biscuits without twisting the cutter and place them close together on the prepared baking sheet.
Bake for 12-15 minutes until golden brown, then brush with melted butter while warm.
Notes
Keep it Cold: Cold butter and cold buttermilk are your best friends for achieving maximum flakiness. If your kitchen is warm, you can even chill your flour and bowl beforehand.
Gentle Handling: Overworking the dough develops gluten, which can result in tough biscuits. Mix just until combined and handle the dough as little as possible when shaping and cutting.
Don’t Twist: Pressing straight down with your biscuit cutter is crucial. This seals the dough walls properly for a good rise.
Close Together: Placing the biscuits close together on the baking sheet encourages them to bake upwards, creating those lovely, straight sides and ensuring a tender interior.
