1 cup shredded cheddar cheese
1/2 cup black beans, rinsed and drained
1/2 cup corn (canned or frozen)
1/2 cup diced tomatoes
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 jalapeño, seeded and minced
1 teaspoon lime juice
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
Tortilla chips, for serving


Instructions

In a bowl, blend softened cream cheese and shredded cheddar cheese until smooth.

Mix in black beans, corn, diced tomatoes, red onion, cilantro, jalapeo, lime juice, chili powder, cumin, salt, and pepper.

Shape the mixture into a log, then wrap it tightly in plastic wrap.

Refrigerate for at least 2 hours to let the flavors blend and the mixture firm up.

Unwrap the log, optionally rolling it in extra cilantro or diced tomatoes.

Serve with tortilla chips.
