Ingredients
3.5 oz instant vanilla pudding mix
1 cup cold 2% milk
1 1/2 cups non-dairy whipped topping (thawed)
17.25 oz frozen puff pastry (fully thawed)
1 pint fresh strawberries (thinly sliced)
1/4 cup confectioners’ sugar
Instructions
Whisk pudding mix and milk in a bowl for 2 minutes until thickened
Gently fold in thawed non-dairy whipped topping until smooth
Thaw puff pastry on parchment paper; cut into 12 equal rectangles
Spread a thin layer of filling over each rectangle (about 2 tbsp)
Top half with sliced strawberries and a final layer of pastry
Chill assembled layers for 30 minutes to set
Dust with confectioners’ sugar before serving
