Description

This easy white chicken chili recipe is a comforting and flavorful bowl of goodness, perfect for a cozy weeknight meal or feeding a crowd. It’s creamy, hearty, and packed with tender chicken, creamy beans, and a gentle warmth from the spices that will have everyone asking for seconds.

1.5 lbs boneless skinless chicken breasts
1 medium yellow onion, diced
2 cloves garlic, minced
2 cans (15 oz each) great northern beans, drained and rinsed
1 can (4 oz) diced green chilies
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp chili powder
1/4 tsp cayenne pepper
2 cups chicken broth
1/2 cup sour cream
1/2 cup heavy cream
Salt and black pepper to taste
Fresh cilantro and lime wedges for serving


Instructions

Put the chicken breasts into the bottom of your slow cooker.
Layer the diced onion, minced garlic, rinsed great northern beans, diced green chilies, cumin, oregano, chili powder, cayenne pepper, salt, and pepper on top of the chicken.
Pour in the chicken broth and gently stir everything together.
Place the lid on and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the chicken is easily shredded.
Take out the chicken, shred it with two forks, and then return it to the slow cooker.
Stir in the sour cream and heavy cream. Put the lid back on and cook on LOW for an additional 15 minutes until heated through.
Serve warm, garnished with fresh cilantro and a squeeze of lime juice.

Notes

The chicken is perfectly cooked when it flakes apart easily with a fork. If it still feels tough, let it cook a little longer.

Stirring in the sour cream and heavy cream at the very end prevents them from curdling and ensures a luxuriously smooth texture.

While the slow cooker does the heavy lifting, layering the ingredients as directed helps distribute the flavors beautifully throughout the chili.

If you’re sensitive to heat, you can reduce or omit the cayenne pepper. For more heat, add a pinch more or a dash of your favorite hot sauce at the end.
