Description
This Easy Hamburger Stroganoff is a comforting classic with a rich, creamy sauce and tender ground beef. It’s the perfect weeknight meal, ready in under an hour and sure to become a family favorite.
Ingredients
1 tablespoon extra-virgin olive oil
1 pound lean ground beef 90% or 93% lean
2 teaspoons smoked paprika
1 teaspoon dried thyme
1 ½ teaspoons garlic powder
½ teaspoon onion powder
½ teaspoon kosher salt
½ teaspoon ground black pepper
6 ounces egg noodles whole wheat if possible
16 ounces cremini baby bella mushrooms sliced
2 tablespoons all-purpose flour
1 15-ounce can beef broth divided
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard optional
⅔ cup full-fat Greek yogurt at room temperature or sour cream about 5 1/2 ounces
Chopped fresh parsley or thyme optional
Instructions
Take out your Greek yogurt if it is chilled. Heat olive oil in a skillet over medium-high heat. Add ground beef, smoked paprika, thyme, garlic powder, onion powder, salt, and pepper. Cook, breaking up the meat, until browned, around 6-8 minutes. Drain excess grease if needed.
Reduce heat; add sliced mushrooms. Cook until softened and browned, around 8-10 minutes.
Meanwhile, boil salted water. Cook egg noodles until al dente, drain, and set aside.
Sprinkle flour over beef and mushrooms and stir. Pour in one-third of the beef broth; stir to scrape the pan. Add Worcestershire sauce and mustard. Add remaining broth; boil, then reduce heat and simmer for 10 minutes.
Remove from heat; cool slightly. Stir in room-temperature Greek yogurt. Season to taste. Serve hot over noodles, sprinkled optional fresh herbs, or serve mixed together.
Notes
Don’t skip draining the excess grease from the ground beef. This step prevents the Stroganoff from being overly greasy.
Don’t Overcook the Beef: Cook ground beef until it is no longer pink. Overcooked beef can become dry and chewy.
Bloom the Garlic: Cook the garlic only until fragrant, being careful not to burn it. Burnt garlic will make the sauce bitter.
Check the Seasoning: Taste the sauce after you add the sour cream and adjust the salt and pepper to your preference.
Don’t Boil the Sauce After Adding Sour Cream: Boiling the sauce after adding sour cream can cause it to curdle.
Serve Immediately: Hamburger Stroganoff is best served immediately because the sauce can thicken as it sits.
