Ingredients
1/4 cup ghee or butter, divided
1 tablespoon olive oil
1 lb yukon gold potatoes, cut into 1/2 inch cubes
3 garlic cloves, minced
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon sea salt, plus more to taste
1/4 teaspoon ground black pepper, plus more to taste
1 1/4 lb sirloin steak, cut into 1/2 inch cubes
Instructions
Prepare a cast iron skillet over medium heat, adding olive oil and 1/2 of the ghee or butter.
Add cubed Yukon Gold potatoes. Sprinkle in the minced garlic, dried thyme, dried oregano, 1/2 teaspoon of sea salt, and 1/4 teaspoon of ground black pepper. Stir everything to coat the potatoes.
Allow the potatoes to cook, stirring occasionally, until they are beautifully golden brown and tender throughout. This usually takes about 15-20 minutes.
Once they’re done, carefully remove the potatoes and any delicious browned bits from the skillet and set them aside in a bowl.
Add the remaining ghee or butter to the same skillet. Increase the heat slightly to medium-high.
Add your cubed sirloin steak to the hot skillet in a single layer, being careful not to overcrowd the pan.
Sear the steak cubes for 2-3 minutes per side, or until they are nicely browned and cooked to your desired doneness.
Return the cooked potatoes to the skillet with the steak. Gently toss everything together to combine.
Taste and season with additional sea salt and ground black pepper as needed. Serve immediately.
Notes
Cutting your potatoes into even 1/2 inch cubes ensures they cook uniformly, preventing some from being overcooked while others are still firm.
When searing the steak, it’s important to give the cubes enough space in the skillet. Overcrowding can lead to steaming rather than searing, resulting in less flavorful and less browned steak. Cook in batches if necessary.
While this recipe involves combining everything directly, if you prefer your steak exceptionally tender, you can let the seared steak cubes rest for just a minute or two before adding them back to the potatoes.
