Easy Crockpot Rotel Dip Recipe

  • Total Time: 2-3 hours 15 minutes
  • Yield: Serves 8-10 1x

Description

This easy crockpot Rotel dip is a creamy, cheesy, and delightfully addictive appetizer to share at your next gathering. It’s a guaranteed crowd-pleaser, perfect for dips with tortilla chips, veggies, or even piled on top of a baked potato.

Ingredients

Scale

1 pound ground beef
1/2 pound ground sausage
1 pound Velveeta
8 ounces cream cheese
10 ounce can Rotel
1 Tablespoon chili powder
salt and pepper, to taste
chips and veggies for dipping

Instructions

Brown ground beef and sausage in a skillet. Season with chili powder, salt, and pepper. Transfer the meat to your crockpot.

Add cubed Velveeta, cream cheese, and Rotel. Cook on low for 2 hours.

Stir and serve hot with chips and veggies.

Notes

Don’t Overcook: Keep an eye on the dip during the last hour of cooking to prevent it from drying out.

Slow Cooker Size: Use a slow cooker that’s at least 4-quart size to prevent any overflowing.

Keep Warm: If you want to keep the dip warm for serving over a longer period, switch the slow cooker to the “warm” setting after it’s done cooking and stir it every so often.

Prep in Advance: You can brown the ground beef and cube the Velveeta cheese ahead of time, then store them in the refrigerator, ready to be assembled in the slow cooker later.
