These Easy Cranberry Brie Bites are the perfect little parcels of pure bliss, combining creamy, melted Brie with the sweet tartness of cranberry sauce and the delightful crunch of pecans, all nestled in a flaky, golden puff pastry shell. Ingredients
1 sheet frozen puff pastry, thawed
1 wheel (8 oz) Brie cheese, cut into 24 small pieces
1/2 cup whole berry cranberry sauce
1/3 cup chopped pecans
2 tbsp fresh rosemary, finely chopped
Nonstick cooking spray
Instructions
Prepare your oven by preheating it to 375F (190C) and lightly coating a 24-count mini muffin tin with cooking spray.
Gently unroll your thawed puff pastry on a lightly floured surface, forming a rectangle, and then cut it into 24 equally sized squares.
Carefully press one pastry square into each mini muffin cup, creating little pastry shells.
Place a piece of Brie cheese into the bottom of each pastry cup.
Spoon about a teaspoon of whole berry cranberry sauce over each piece of Brie and add a sprinkle of chopped pecans.
Bake for 13-15 minutes, or until the puff pastry edges are beautifully golden brown and crisp, and the Brie has melted.
Finish with a garnish of finely chopped fresh rosemary and allow them to cool for 5 minutes before gently removing them to serve.
