1.5 lbs lean ground beef
1 small yellow onion, diced
2 cloves garlic, minced
1 packet taco seasoning
2 cans (10 oz each) red enchilada sauce
12 small corn tortillas, cut into halves
2.5 cups Mexican blend shredded cheese
1 can (15 oz) black beans, rinsed and drained
1/2 cup sour cream
Fresh cilantro for garnish


Instructions

Preheat your oven to 375 degrees Fahrenheit and lightly grease a 9×13 inch baking dish.
Brown lean ground beef with a diced yellow onion in a skillet over medium high heat, then drain any excess fat.
Stir in minced garlic and taco seasoning until everything is well combined.
Spread 1/2 cup of enchilada sauce over the bottom of the prepared baking dish and arrange one layer of corn tortilla halves.
Top with half of the ground beef mixture, rinsed black beans, 1 cup of enchilada sauce, and 1 cup of shredded cheese.
Repeat the layering process with the remaining tortillas, beef, enchilada sauce, and the rest of the cheese.
Cover the dish with foil and bake for 20 minutes, then remove the foil and continue baking for another 10 minutes until the casserole is bubbly.
Garnish with sour cream and fresh cilantro before serving.
