Description
Easy Baked Chicken Fajitas are a vibrant, flavorful sheet pan meal that brings Tex-Mex flavor to your kitchen with minimal fuss. Tender chicken and crisp-tender vegetables baked to perfection.
Ingredients
1.5 lbs boneless skinless chicken breasts, sliced into thin strips
3 bell peppers (red, yellow, green), sliced into strips
1 large yellow onion, sliced
3 tbsp olive oil
1 packet (1 oz) fajita seasoning
1/2 tsp garlic powder
1/2 tsp smoked paprika
Salt and black pepper to taste
Warm flour tortillas, salsa, sour cream, and lime wedges for serving
Instructions
Begin by preheating your oven to 400F and preparing a baking dish.
Combine the sliced chicken, bell peppers, and onion in the dish, then toss them with olive oil and a savory blend of spices. Bake until the chicken is cooked and the vegetables are tender, then serve warm in tortillas with your favorite toppings.
Notes
For the most uniform cooking, try to slice your chicken and vegetables into roughly the same thickness. This ensures everything is tender at the same time.
To ensure your chicken is perfectly cooked, cut into the thickest piece. It should be opaque all the way through with no pink remaining.
If you prefer your vegetables with a little more bite, check them around the 20-minute mark and remove them slightly earlier if they’ve reached your desired tenderness.
Make sure to toss everything thoroughly. Even coating with the olive oil and spices is key to getting that delicious, consistent fajita flavor in every bite.
