Ingredients
1 pkg frozen dumplings (about 20 chicken or vegetable dumplings)
2 tablespoons vegetable oil
4 cups mixed greens (spinach, arugula, romaine, etc.)
1 cup shredded carrots
1 cup sliced cucumbers
1 cup cherry tomatoes, halved
1/2 cup thinly sliced red onions
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/4 cup chopped fresh basil
1/4 cup chopped green onions
For the Dressing: 1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon honey
1 garlic clove, minced
1 teaspoon grated fresh ginger
1 tablespoon lime juice
1 teaspoon chili flakes (optional, for a spicy kick)
Instructions
1. Cook the dumplings in vegetable oil in a large skillet over medium-high heat until golden brown and crispy on the bottom and cooked through, about 8-10 minutes. Let them cool slightly.
2. Combine mixed greens, carrots, cucumbers, tomatoes, red onions, cilantro, mint, basil, and green onions in a large bowl.
3. Whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, lime juice, and chili flakes (if using) in a small bowl to make the dressing.
4. Drizzle the dressing over the salad ingredients and toss gently. Top with the cooked dumplings and serve immediately.
Notes
Don’t overcrowd the pan: Give your dumplings plenty of space in the skillet for even browning and crisping. You may need to cook them in batches.
