Ingredients
3 large eggs (at room temperature)
1 cup whole milk (warmed slightly, not hot)
1 cup all-purpose flour, spooned and leveled
1/2 teaspoon kosher salt
1 tablespoon unsalted butter, melted (plus extra for greasing the pan)
1/2 cup fresh sweet cherries, pitted and halved
1 tablespoon powdered sugar (optional, for dusting)
Instructions
1. Preheat your oven to 400F (200C). Place your popover pan or muffin tin in the oven while it preheats so it becomes very hot.
2. In a medium bowl, whisk the room-temperature eggs until they are light and frothy.
3. Slowly pour in the warm milk while whisking to combine everything.
4. Add the flour and salt to the bowl. Whisk the batter just until the flour is incorporated; a few small lumps are okay. Avoid overmixing.
5. Stir in the melted butter.
6. Carefully take the hot pan out of the oven. Quickly brush each cup with melted butter.
7. Place 2-3 cherry halves in the bottom of each cup. Immediately pour the batter over the cherries, filling each cup about halfway to two-thirds full.
8. Bake for 35 minutes. Do not open the oven door while baking, as this can cause the popovers to fall.
9. Take the popovers out of the oven. Use a small knife to pierce the top of each one to release steam, and serve right away with a dusting of powdered sugar if desired.
